Matcha Cake Recept

Ken je dat? Je hebt gehoord of gelezen dat groene thee zo gezond is. En dan ga je naar de winkel om matchapoeder te kopen. De tweede pot voor de halve prijs, dus dan die tweede pot dan ook maar. Makkelijk denk je. Kun je thee van maken, door je sapje of je smoothie heen doen. Maar dan ontdek je dat je het toch niet zo lekker vindt..... En dan ziet je matchapoeder er ongeveer zo uit:

Wat moet je ermee???? Gelukkig was ik kort geleden in mijn favoriete Onigiri mini restaurantje in Amsterdam waar een Japanse theedemonstratie gegeven werd. Ja, er was ook matcha thee. Vers gebrouwen, koud of warm. Zo lust ik het wél. Maar hier kreeg ik de oplossing voor mijn matchapoeder, een recept voor matcha cake. Hij is superlekker, zoals ik het lekker vind: niet te zoet, wetende dat het (min of meer) gezond is kun je er zonder schuldgevoel van genieten. Ik mocht het recept delen, dus bij deze!
Benodigdheden:
  • 20 gr. matchapoeder
  • 220 gr. bloem (kan ook met glutenvrije meel)
  • 200 gr. boter
  • 190 gr. suiker
  • 4 eieren
  • 25 gr. zwarte bonen (Bonduelle zwarte bonen)

Methode:

Verwarm de oven voor op 170°C. 

1. Voeg bloem/meel en matchapoeder toe in een grote kom
2. Smelt de boter in een pannetje (of magnetron) en voeg to aan meel/matchamengsel. Meng goed.
3. Mix de suiker en de eieren in een aparte kom met een mixer
4. Voeg nu 2 en 3 samen
5. Voeg de bonen aan het mengsel toe toe (ik heb de bonen van tevoren een beetje platgeprakt, maar als je hele bonen in je cake wil kan dat ook)
6. Giet het cakemengsel in een ingevette cakevorm, of gebruik bakpapier in je cakevorm. Strijk het mengsel een beetje glad en bak voor 35-45 minuten. 
7. Prik met een satéprikker in de cake om te checken of de cake goed doorbakken is (dan komt de prikker droog uit de cake). 

Eventueel kun je er plakjes van snijden en invriezen. Zorg ervoor dat de plakken niet aan elkaar plakken door tussen elk plakje een stukje bakpapier toe te voegen (dezelfde bakpapier die je evt. hebt gebruikt voor het bakken zelf).

En het resultaat is.... delicious!!!!!
Zoals je ziet had mijn cake ietsje langer in de oven gemoeten, maar het bleef een lekkere cake.

Glutenvrij in Noord Spanje - een beetje tricky

Ik kom net terug van een weekje Noord Spanje. En het is altijd maar afwachten hoe het in een ander land aan toe gaat, wat alles betreft natuurlijk, maar in dit geval gaat het over glutenvrij eten. Gelukkig logeerden we bij vrienden dus het eten thuis was veilig. Maar natuurlijk hebben we ook buiten de deur gegeten en dit was vaak wel 'tricky'. In de titel staat een vraagteken zoals je ziet, ik kan niet met 100% zeggen hoe makkelijk glutenvrij eten in Spanje is. Ten eerste hadden wij het geluk dat we onze Spaans-
sprekende vriendin bij ons hadden dus zij deed overal het woord. Zelf spreek ik geen Spaans en zou ik er heel veel moeite mee gehad hebben om met het personeel, dat soms geen of heel gebrekkig Engels sprak, te informeren naar gluten. Ten tweede: Spanje is groot. Misschien is het in andere delen van Spanje wel super makkelijk, en heb je overal menukaarten met allergenen? Ten derde: wij waren er maar een week, en hebben vaak thuis gegeten, dus echt een goede mening valt niet te vormen. Toch waren er wel wat dingen die opvielen. In de betere restaurants is het personeel niet te beroerd om even na te vragen in de keuken hoe het staat met de gluten. Uit veiligheid zou je de sausjes kunnen mijden en alleen de pure produkten kiezen: vlees, vis, groenten.

In de tapas bars kun je makkelijk op safe spelen door alleen de hapjes te nemen die duidelijk glutenvrij zijn: olijven, gemarineerde vis, paprika, tomaat etc. De overige tapas zijn duidelijk een no-no: kleine broodjes met van allerlei lekkers erop. Ook de tortila's zijn veilig. Alhoewel ik hier wel een onbehagelijk gevoel bij kreeg. Wij waren in een barretje waar ze wel 6 soorten tortilla's op de bar hadden uitgestald. Ik vroeg mijn vriendin voor de zekerheid of ze dacht dat er gluten in de tortilla's zaten en ze zei "nou, dat bestaat uit alleen maar ei en aardappel, toch?". Vraagteken???

Inderdaad, dacht ik, tortilla's bestaan uit ei en aardappel, maar sushi hoort ook uit rijst en vis te bestaan, en tóch bestaat er sushirijst mét bloem/meel! Parijs, USA.... En échte satésaus hoort ook geen gluten te hebben maar tóch zit er in de meeste 'Westerse' saus gluten. Ga je in Azië een sateetje halen dan is alles prima. Of bij Hotel Jakarta ;o)

Op hoop van zegen heb ik de overheerlijke tortilla opgegeten. Niks aan het handje. En misschien is dit wel een beetje de algehele clue, dat je lokaal, in minder touristische gebieden, wel veilig glutenvrij kunt eten maar voorzichtigheid blijft geboden.

De supermarkten hebben wel glutenvrije produkten, je kunt er goed uit de voeten met de basics. Ongeveer vergelijkbaar met Nederland. Waarschijnlijk kun je in de Carrefour een grotere selectie aan glutenvrije produkten vinden.  Kijk naar het woord 'sin gluten'.

Gezond op het strand met een makkelijke salade...

Eigenlijk voldoet maar één woord voor dit stukje, namelijk 'VOORBEREIDING'. Ga je naar het strand? Bereid je dan voor door een lekkere, gezonde, vullende salade mee te nemen. Helaas, ik heb geen recept voor je, maar ik noem het maar een 'Just Chuck it Together Salad': Je kijkt in je koelkast en gooit gewoon wat bij elkaar. 
Ik let er dan eigenlijk niet zo op of alles wel bij elkaar past. Helaas zijn boterhammen niet aan mij besteed vanwege de gluten dus eigenlijk is dit dan een noodoplossing waar ik eigenlijk wel heel blij mee ben. Meestal pakt mijn creatie goed uit en je voeding hoeft niet altijd uit culinaire hoogstandjes te bestaan. Simpel is vaak het lekkerst! Deze salade van de dag bestond uit:

  • Fijngehakte bloemkool (een soort couscous en dit had ik nog over van de vorige dag)
  • Maiskorrels
  • Zwarte olijven
  • Kerriepoeder
  • Blaadjes sla
  • Blaadjes basilicum
  • Gekookt ei (laat je leker 'vol' voelen)
  • Sesamzaadjes (boordevol calcium)
  • Fetakaasblokjes
  • Poempoenpitolie
  • Lijnzaadolie (supergezond, denk aan essentiële omega3 vetzuren...)

Ik neem zelfs niet eens de moeite om alles te mengen, ik 'gooi' het gewoon boven op elkaar in een grote afsluitbare bak. Lekker om elke keer weer aan een nieuw laagje smaken te beginnen :o)

Australiƫ - Glutenvrije Hemel

Het is alweer een tijdje geleden, mei 2018, dat ik met mijn gezin in Australië was. Zoals bijna iedereen geniet ik ervan om op vakantie te zijn, en ik hou ervan om niet teveel van tevoren te plannen, fijn om dingen aan het toeval over te laten. Maar als het op eten aankomt is er toch een belangrijk probleempje: gluten! Echt, ik kan er niet tegen. Als ik ze toch per ongeluk eet, lig ik 's avonds in de badkamer op de grond met enorme buikpijn, overgeven, rode jeukende huid, en soms, soms, is zo'n aanval zo heftig dat ik eigenlijk net zo lief doodga. 
Ik neem dus zo min mogelijk risico en laat wat voeding betreft niks aan het toeval over. Ik heb dus dagelijks diverse stressmomentjes op vakantie. Wij waren 4 jaar geleden in Australie en toen werd er al goed rekening gehouden met glutenintolerante mensen. Fast forward het Australië van nu: HEAVEN!!! Echt, het is een absolute breeze om door Australië te reizen voor mensen met een glutenintolerantie. Zelfs in the middle of nowhere kun je nog 'meat pie' vinden zonder gluten! 
Hier waren we in Cann River, op weg van familielid nr. 1 naar famililid nr. 2 (we hebben van beide kanten nogal wat familie in Australië). Ik was goed voorbereid op onze lange reis, met eigen snacks en glutenvrije repen maar eigenlijk was het niet nodig geweest. In de supermarkten, die over het alemeeen heel wat groter zijn dan in Nederland, is de keuze aan glutenvrije produkten overweldigend. Ga je naar de 'snackbar'? Geen probleem. Ze maken zo een broodje gebakken kip voor je, met friet erbij, speciaal gebakken op een aparte kookplaat. Op een glutenvrij broodje natuurlijk.

Ook de 'typisch Australische' produkten, zoals WeetBix (ontbijtgranen), TimTam (chocoladekoekje) zijn er in glutenvrije versie. Glutenvrij brood, niet te vreten, toch? Niet in Australië. Mijn lieve schoonzus had alles in huis. Dagje picnic? Prima te doen! Het glutenvrije brood van de surpermarkt smaakt echt prima! De lekkerste glutenvrije pizza ooit heb ik in een restaurant in Canberra gegeten. Lekkerder nog dan een gewone pizza van de Italiaan!

En weet je wat ik eigenlijk nog het leukste van alles vind aan Australië? Maar dan ook superleuk? Dat het personeel in bijvoorbeeld restaurants je niet als een of andere Alien aankijkt of je behandelen als een miepje die zonodig aan een hippe onnozele trend meedoet. Het personeel is altijd goed geï​nformeerd en vriendelijk. Ze behandelen je ook niet overdreven serieus, wat ook wel eens gênant kan zijn (denk aan de chef in Disney Parijs die helemaal de keuken uitkwam om met me te praten over hoe serieus mijn glutenintolerantie was...). Gewoon lekker nuchter en luchtig. Wat dat betreft hoop ik dat Nederland over 4 jaar ook zover is.

Mchi Restaurant - Gluten Friendly Rating

Yet another Restaurant Week try-out. This time we set our mind on Mchi, an Asian style restaurant on Amsterdam IJburg. We (husand and I) looooove Asian food. After last week's gluten scare in another restaurant, I rang them the day before, to make sure they cater for gluten free customers. Yes, they certainly did, they said. Upon arrival, our host confirmed they knew about the gluten free requirement. Good start! There were prawn crackers on the table, I did not touch them, just in case. During Restaurant Week, you don't get to choose, there is a set menu. We happen to love pleasant surprises :o)
To make a long story short: everything was just fine. Actually, almost perfect. The food was absolutely delicious. We are serious sushi monsters, and we liked the sushi. Noticed the word 'like' rather than 'love'? Having lived in Asia for a while, we are kind of spoilt when it comes to sushi. For a change, the gluten free version was even better than the 'gluten containing' version. This is what husband told me. 
The tricky bit was: both gluten free and gluten containing sushi were together on the same 'boat', not touching the other though. People with coeliac disease would, ofcourse, freak out and not be able to eat it. But for me it was fine. And this is what I was really happy with: they had tamari! Strangely enough, most Asian restaurants don't have tamari, the perfect gluten free alternative for soy sauce. Really, how easy is this? Small investment, great joy to the gluten avoiding customer. The other dishes were meat dishes, also very nice. And out of 5 desserts, there was one gluten free version, a panna cotta, also very tasty, and not too sweet, which I love.

Besides the gluten story, this restaurant was just very pleasant in many ways: nice, modern, warm Asian style gezellig interior, all staff very friendly, just the right amount of attention from the staff, good price also outside of Restaurant Week, the noise level was good (yes, I  have very sensitive little ears). But from a gluten perspective I would give this restaurant a gluten friendly rating of 8 or even

Harbour Club Oost - The Gluten (S)care Rating

It's restaurant week, and we managed to select a few. The first one was Harbour Club Oost, not far away from where we live. We had passed by several times before and were always wondering how it would be inside. Well, there are soooo many restaurant review sites already, you're probably not waiting for yet another one. Every time when I go to a restaurant, I pay extra attention to possible gluten contamination. Over the years, I've become more and more 
intolerant, to the point that a product that 'may contain gluten' already sets me off. And every time when there is a scare, or, when the restaurant is taking extra good care of the gluten fearing customer, it makes impression on me. So why not sharing it so others be warned, or reassured. My scale is going to be named 'The  Gluten Care Rating', taking it from the positive side (not gluten SCARE rating....). 

During the booking process it was already possible to indicate special dietary requirements, so ofcourse I added 'one person gluten free'. In the confirmation mail it was recommended to mention the dietary requirements again to the host. So upon arrival I mentioned to our host that I had requested gluten free dishes. The host was very helpful and said she was going to mention it to the kitchen. She came back to us, telling us about the dishes containing gluten and the possible alternatives. It was a pre-set menu, it looked lovely, and I was completely happy with the alternatives offered.

Starter warning: the host mentioned there were gluten in the mushrooms (strange I thought, but it could have been the sauce on the mushrooms). My starter had mushrooms in it so I double checked before I ate any of it. Unfortunately the kitchen had given me a gluten containing starter. It didn't take long before I was served the gluten free version. Happy,  so far, can happen.

Main dish warning: a fish dish, but there was something on it that looked like a bitterbal/croquette with bread crumbs on the outside. The guy (not our host) apologised and it did not even come across his mind to take the whole plate away. I was a bit confused and I decided to just eat around the scary bitterbal, making sure not getting too close to the scary bitterbal. I had taken my anti-gluten medicines before just in case but looking back to it, I should have sent the whole plate back. Lovely main dish by the way. When our lady host checked upon us I mentioned to her that her kitchen is not very careful with the gluten request. I was absolutely sure she had done her job, making sure she got the message across to the kitchen, but it was not enough, apparently. 

Dessert: this was clear, it had gluten, so I got the cheese platter instead, with gluten free bread. Also very nice.

Tea/coffee alert: as hubby and I had a good time anyway (we both don't get upset very easily), despite all of this, we decided to have a mint tea to end our evening. You would think they learned their lesson by now. But no! My mint tea was accompanied by a pretty scary glutenous cookie!!!! I would have loved some chocolate instead, or, something else small and sweet, gluten free. Not so complicated, is it? Our bill came, plus a special iPad, and we had written down all our concerns, basically all I'm writing down right now, but the short version.

Ode To Peanut Butter

Today is Peanutbutter Day, I just found out. Well, I love peanut butter so it's time for a mini ode to peanutbutter. To me, it fits into a healthy lifestyle. Why? Peanut butter is so versatile, you can create snacks with them, add them to smoothies, porridge, sauces or simply on a sandwich. My absolute favorite late night evening snacks are slices of apple, topped with peanut butter, with a bit of cinnamon. Gross? How about pear with peanut butter? One of my customers once told me honestly he thought I was 
crazy, offering this as an option for a snack. Apple with peanut butter??? Until he tried it himself. Sold. I usually spread the peanut butter on the slices of apple, nicely and evenly. But if you are in a rush, or lazy, you can just put a dollop of peanut butter on the side and use it as a dip instead. Easy peanutsy :o)

So rather than grabbing a bag of crisps (like my customer used to do), attack the ice cream tub or whatever you fancy at the time, try peanut butter and fruit for a change. The combination of fibres and protein will make you feel satiated for a while, resulting in a guilt free, good night sleep.

I shop for 'palm oil free' products nowadays , for a very important reason, which I will write about later. It seems really difficult to find palmoil free products! But once you know your brands it's easy peanutsy again. And guess what, in Amsterdam we have the Peanutbutter Shop (Pindakaaswinkel) and all of their peanutbutters are free from palm oil, and gluten free. I live really closeby and never went there, will do so soon!

Zeewier groentenburger - Sea Weed Burger Yes or No?

I'm usually not too crazy about meat replacements, as in a slab of soy on your plate. Don't like soy, for a reason, this is for another blog. I'm very interested, though, and always look out for good replacements, as I don't eat a lot of meat. Some of them have the right ingredients,  lots of vegetables and not too many perservatives. But often they contain gluten, so that's a no-go for me. So I just stick to the real thing instead, real meat, in small quantities, organic.

Last week I was intrigued by this seaweed burger sold at the Jumbo. I love everything seeweed. Not only because of the flavour, but also because of its health benefits. It contains lots of iodione, calcium, iron, to name a few. Most of us are deficient in iodine, which is necessary for a good thyroid function. This particular burger was also gluten free! The ingredients also looked promising. But the flavour.... I would have loved this one to taste good but it was a bit disappointing. It was very peppery, or, there was something spicy about it that was overruling the seaweed taste. I can handle some spiciness and found it intriguing that I could not find anything on the ingredients list that could cause the spiciness. Maybe, maybe, without the pepper (or chili?) it would have been alright? Maybe a bit more herbs to enhance the flavour?

Anyway, I always try to highlight the positive rather than the negative, so here might be the solution: my husband ate the other burger (very brave I must say) and he added some mayonaise. He said it was 'not too bad' with mayonaise. So, I will give it another try in a few weeks time and will try it with mayo. I would love this brand to be successful, because this is just what I'm looking for in my food: nutritious, healthy, fair, environment friendly. Way to go Olijck! May my little tiny blog help a lot ;o)

Lazy Soup...

Do you know that feeling? You want to eat something healthy for lunch, but you don't want to spend a lot of time in the kitchen. This soup is my to-go-to solution, you could make it in advance, take it to work in a thermos, freeze it or eat is straight away. Love it love it. All you need is:
  • 1 pack of soup greens 'fijne soepgroenten'
  • 1/2 liter of water
  • 1 bouillon cube
  • 1 onion
  • some shredded ginger
  • pack of soup of your choice

I'm not sure if I need to write instructions because it is sooooo simple. Just start with the onions, fry them until soft. Add the shredded ginger and fry for another minute. Add the soup greens and fry until soft, stirring in between. Add water and bouillon block and let it simmer for about 10 minutes with the lid on. You could eat it just like it is, or, ad a pack or can of soup of your choice. Stir, eat, enjoy, your body will love you for it!

Een Verrassende Kruidenmix - Za'atar

Als 'spice lover' was het nogal vreemd voor mij om iets te ontdekken wat ik nog niet kende: za'atar. Je kunt het natuurlijk zelf maken maar hoe makkelijk is het als je het gewoon kunt kopen bij je plaatselijke winkeltje? Al is het maar om te ontdekken hoe het hoort te smaken.
Za'atar is een mix van kruiden die vaak in het midden oosten gebruikt wordt en bestaat uit een mix van sesam, tijm, basilicum, oregano, koriander, dille, peterselie en gedroogde vermalen bes. 

Een saaie courgettesoup tover je in een handomdraai om in een heerlijke spannende soep. Broodje erbij, of zoals wij dat gisteren deden gebakken kip nuggets die nog op moesten, en je hebt een maaltijd.


Dit is het super simpele recept voor de Za'atar Courgettesoep:

Benodigdheden (voor 4 personen):
- 6 courgettes
- 1/2 liter kippen- of groentenbouillon
- croutons (eventueel glutenvrij)
- za'atar
- kokosolie

Bereiding:
- Snij de courgette in blokjes (ongeveer 2 x 2 cm.)
- Verhit een eetleper kokosolie in een soeppan en voeg alle courgette toe
- Roerbak op middelhoog vuur ongeveer 5 minuten
- Voeg de bouillon toe en laat zachtjes sudderen tot de courgette gaar is. Niet te gaar, het moet nog een beetje knapperig blijven. Haal een flinke soeplepel courgetteblokjes uit de pan en zet apart
- Bak een handvol croutons samen met een eetlepel za'atar in een apart pannetje in een klein laagje kokosolie, tot de croutons goudbruin zijn
- Met een staafmixer mix je de courgetteblokjes tot een gladde soep
- Indien de soep te dik is, voeg je wat water of bouillon toe

Opdienen:
- Schep de soep in een diepe kom en in het midden van de kom voeg je ongeveer 5 blokjes courgette toe. Daaroverheen strooi je een eetlepel van de crouton/za'atar mix. Bon Apetit!
