Believe it or not, making simple and satisfying meals from scratch doesn’t have to be hard. Here are some of my favorite easy, healthy recipes. You’ll find that eating well can also be delicious!

Kale chips
Ingredients:
Kale
Salt
Olive oil
Method:
Preheat your oven to 135 degrees Celsius. Cut the spine off the kale and divide the leaf up into bite size chunks. Coat the leaves with olive oil, or the easy way, spray with Pam. Bake for about 10 minutes on one side, flip over, and another 10 minutes on the other side, or until the leaves are crispy, Take it out, sprinkle with salt to taste.
Tip: for added flavour sprinkle with a little spice as well, such as curry powder or cumin.
